INGREDIENTS
- 1.8 lbs. roast silverside (top round)
- 1 tbsp. vegetable oil
- 1 cup red wine
- 1 carrot, grated or blended
- 2 tomatoes, grated or blended
- 1 bay leaf
- 3 cups beef broth or water
- Salt to taste
- Pepper to taste
- 1 packet (1.79 oz) Q’ocina en Casa Red Sofrito Culinary Base
PREPARATION

In a pan over medium heat, with hot oil, sear beef seasoned with salt and pepper. Remove beef and reserve.

Add the beef back into pan, add wine, beef broth or water, and bay leaf. Stir and cook meat with pan covered over medium heat for 1 to 1 ½ hrs. or until completely tender. Remove from heat and add salt to taste.

Once cooked, let the asado rest in the pan for at least 15 mins. Then cut into 8 slices and serve 2 on each plate with sauce.
TIP:
Best when accompanied by creamy potato purée.
If desired, decorate with finely chopped cilantro.
If using a pressure cooker, cook beef for only 30 to 40 mins.
Nota: 1 tz = 250 ml
