INGREDIENTS

  • 1 turkey breast (approx. 6.6 lbs.)
  • 1 tbsp vegetable oil
  • Saltwater (add 3.5 oz. salt per liter of water)
  • 2 onions, cut in rings
  • 1 cup peeled garlic cloves
  • 1 cup fresh-squeezed orange juice 
  • ½ cup beer
  • 1 tbsp American or Dijon mustard
  • 1 tbsp butter
  • 1 tbsp corn starch diluted in 2 tbsp cold boiled water
  •  Salt and pepper to taste
  • 1 packet (1.79 oz) Q’ocina en Casa Red Sofrito Culinary Base

PREPARATION: MARINATING

In a pot, add turkey breast and let rest, covering with brine (saltwater) for approx. 1 to 1 ½ hrs. Remove turkey breast and let excess liquid dry.

In a blender jar, add oil, garlic, orange juice, beer, contents of and contents of one packet of Q’ocina en Casa Red Sofrito Culinary Base,mustard, salt, and pepper. Blend for several minutes until obtaining an even consistency.

In a pot, add preparation from step 2 and marinate turkey breast in it for at least three hours with pot covered.

PREPARATION: ROASTING

On a baking pan, arrange onion rings in a bed, placing turkey on top with bony part face down, and add liquid from marinading. Cover with aluminum foil and cook in a preheated oven at 150°C for 1 ½ hrs.

Remove from oven and take off aluminum foil. Cover (smear) turkey skin with butter. Put pan back in oven for 40 mins. or until turkey is cooked through and golden brown in color. Remove turkey from oven and let stand. Strain juice from the cooking process and set onions and juice aside separately.

In a pot, add cooking juices and bring to a boil. Immediately add corn starch diluted in water and stir until reaching a sauce-like consistency. Finally, add salt to taste, stir, and remove from heat.

Fillet turkey breast, separating it from the bone to obtain 16 fillets.

On a pan, add a bed of cooked onions, placing turkey fillets on top and bathing in sauce.

TIP:

  • For best flavor, let turkey marinate overnight in a covered pot in the refrigerator.

  • If the turkey is browned before it is fully cooked, cover it again with aluminum foil to finish cooking while preventing

  • Goes well with potato salad, sweet potato or apple purée, and/or Christmas-style rice.
