INGREDIENTS
- 4 pieces chicken (approx. 2.2 lbs. legs and thighs, bone-in, or 1.3 lbs. fillet)
- 7 oz. chicken giblets
- ½ cup peas
- 1 peeled papa blanca (white potato), cut into quarters
- 1 ear Peruvian corn (choclo), chopped into four rounds
- ¼ cup rice
- 1 red bell pepper, cut into cubes
- ½ bunch cilantro
- ½ cup carrots, cut into cubes
- 8 cups chicken broth or water
- Oregano to taste
- Pepper to taste
- Cumin to taste
- Salt to taste
- 1 packet (1.79 oz) Q’ocina en Casa Green Sofrito Culinary Base
PREPARATION

In a pan, add cilantro blended in 1 cup chicken broth or water, chicken, giblets, 7 cups chicken broth or water, contents of one packet of Q’ocina en Casa Green Sofrito Culinary Base, rice, corn, and potatoes. Cook covered for 15 mins.

Add carrots, peas, bell pepper, oregano, and cook for 10 more mins. Remove from heat.

Finally, add salt, pepper, and cumin to taste.

On a soup plate, serve potatoes, corn on the cob, and chicken in broth.
TIP:
