INGREDIENTS
- 4 pieces chicken (approx. 2.2 lbs. bone-in or 1.3 lbs. fillet)
- 1 red onion, julienned
- Juice of 3 limes
- 1 ½ cups chicken broth or water
- 1 cup cilantro
- 1 tbsp. vegetable oil
- ½ seedless yellow chili pepper, julienned
- 1 cda 1 tbsp. chuño diluted in 2 tbsp. 3 tbsp. cooled boiled water
- Pepper to taste
- Cumin to taste
- Salt to taste
- 1 packet (1.79 oz) Q’ocina en Casa Yellow Sofrito Culinary Base
PREPARATION

Wash chicken. Season with salt, pepper, cumin, and then sear in a pan with hot oil.

In the same pan, add chicken broth or water, contents of one packet of Q’ocina en Casa Yellow Sofrito Culinary Base. and place half of the cilantro tied in a knot.

Cook chicken for 30 mins. with pan covered. Remove cilantro once this step is completed.

Add the diluted chuño, the rest of the cilantro (finely chopped), onion, and lime juice. Stir and remove from heat.

Let settle for 5 mins. and serve.
TIP:

If desired, serve with rice with Peruvian corn (choclo) and/or accompany with parboiled manioc or sweet potato.

Decorate with finely chopped cilantro and half a chili pepper, cut in rounds.
- Legs and thighs work best for this recipe.
