INGREDIENTS

  • 4 pieces chicken (approx. 2.2 lbs. bone-in or 1.3 lbs. fillet)
  • 1 red onion, julienned
  • Juice of 3 limes
  • 1 ½ cups chicken broth or water
  • 1 cup cilantro
  • 1 tbsp. vegetable oil
  • ½ seedless yellow chili pepper, julienned
  • 1 cda 1 tbsp. chuño diluted in 2 tbsp. 3 tbsp. cooled boiled water
  • Pepper to taste
  • Cumin to taste
  • Salt to taste
  • 1 packet (1.79 oz) Q’ocina en Casa Yellow Sofrito Culinary Base

PREPARATION

1-amarillo

Wash chicken. Season with salt, pepper, cumin, and then sear in a pan with hot oil. 

2-amarillo

In the same pan, add chicken broth or water, contents of one packet of Q’ocina en Casa Yellow Sofrito Culinary Base. and place half of the cilantro tied in a knot.

3-amarillo

Cook chicken for 30 mins. with pan covered. Remove cilantro once this step is completed.

4-amarillo

Add the diluted chuño, the rest of the cilantro (finely chopped), onion, and lime juice. Stir and remove from heat.

5-amarillo

Let settle for 5 mins. and serve.

TIP:

  • If desired, serve with rice with Peruvian corn (choclo) and/or accompany with parboiled manioc or sweet potato.

  • Decorate with finely chopped cilantro and half a chili pepper, cut in rounds.

  • Legs and thighs work best for this recipe.
