INGREDIENTS

  • 4 pieces chicken (approx. 2.2 lbs. bone-in or 1.3 lbs. fillet)
  • 1 tbsp. vegetable oil
  • 2 medium potatoes, cut in half
  • ½ cup peas
  • 1 carrot, cut in rounds
  • ¼ cup purple raisins
  • 2 cups chicken broth or water
  • Salt to taste
  • Pepper to taste
  • 1 packet (1.79 oz) Q'ocina en Casa Red Sofrito Culinary Base

PREPARATION

Wash and dry chicken, season with salt and pepper, then sear in a pan with hot oil.

Cover pan and cook over medium heat for 20 mins.

Then add peas, carrots, and raisins. Cover pan and cook over medium heat for 15 more mins., until all ingredients are fully cooked. Remove from heat.

Finally, add salt and pepper to taste. 

TIP:

  • Accompany with cooked white rice.

Nota: 1 tz = 250 ml
