INGREDIENTS
- 1 dozen whole mussels
- 1.1 lbs. cleaned seafood mixture
- 1 tbsp. vegetable oil
- 2 green bellaco bananas (ripe), cut into rounds
- 2 cups mussel broth
- 2 tomatoes, cut into cubes
- 1 bunch cilantro, half in bunch and half chopped
- 1 lime
- Salt to taste
- Pepper to taste
- Cumin to taste
- 1 packet (1.79 oz) Q’ocina en Casa Green Sofrito Culinary Base
PREPARATION

Clean mussels thoroughly. Put them in a pot with 3 cups water with salt, ½ bunch cilantro, and let boil until mussels are completely open (approx. 20 mins.). Strain, remove cilantro, debeard mussels, maintaining them in their shell, and reserve mussels and broth separately.

In a pan over low heat, slowly cook banana rounds, submerging them in hot oil until cooked through (approx. 30 mins.). Remove banana rounds from oil, strain, and mash.

In a separate wide pan over medium heat with hot oil, shallow-fry tomatoes for 2 mins. Add seafood mixture, 2 cups mussel broth, and contents of one packet of Q’ocina en Casa Green Sofrito Culinary Base.Stir.

Immediately add mashed banana and cook, stirring constantly for 3 mins. until preparation takes on an even texture. Remove from heat.

Finally, add salt, pepper, and cumin to taste, juice of 1 lime, finally chopped cilantro, and stir.

Serve in a wide-rim soup bowl and decorate with mussels.
TIP:
- If desired, accompany with plantain chips and sarza criolla.
