INGREDIENTS
- 4 pieces chicken (approx. 2.2 lbs. bone-in or 1.3 lbs. fillet)
- 1 cdas de aceite vegetal (aprox. 15 ml)
- 2 ears Peruvian corn (choclo) with kernels cut off (not too soft)
- 2 cups cilantro
- 3 cups chicken broth or water
- Salt to taste
- Pepper to taste
- 1 packet (1.79 oz) Q’ocina en Casa Green Sofrito Culinary Base
PREPARATION

Wash chicken, dry, season with salt and pepper, and sear in a pan with hot oil.

In the same pot, add 2 ½ cups chicken broth or water and contents of one packet of Q’ocina en Casa Green Sofrito Culinary Base. Cover pan and cook over medium heat for 20 mins. until chicken is cooked through. Remove chicken pieces and reserve, keeping them hot.

In a blender, process corn kernels with ½ cup chicken broth or water and 2.8 oz. cilantro. Reserve.

Add processed corn to pot with liquid from cooked chicken. Cook slowly, stirring constantly until corn is completely cooked. Remove from heat.

Put chicken back in pot and add remaining cilantro, finely chopped. Finally, add salt and pepper to taste.
TIP:
- If desired, serve with yellow rice (arroz amarillo) rice with peas and sarza criolla.
