PORK SIRLOIN IN PASSIONFRUIT SAUCE (serves 4)

INGREDIENTS
- 2.2 lbs. pork sirloin
- Saltwater (add 3.5 oz. salt per liter of water)
- 1 tbsp vegetable oil
- 1 cup white wine
- 1 passionfruit (strain and let juice and seeds rest separately)
- 1 tbsp American or Dijon mustard
- 1 carrot, diced into large cubes (mirepoix)
- 1 onion, diced into large cubes (mirepoix)
- ½ tsp white sugar
- Salt and pepper to taste
- 1 packet (1.79 oz) Q’ocina en Casa Yellow Sofrito Culinary Base
PREPARATION: MARINATING

In a pot, add pork sirloin and let rest, covering with brine (saltwater) for approx. 40 min. Then remove pork sirloin and let excess liquid dry.

In a pan with hot oil, sear the pork sirloin (previously seasoned with salt and pepper). Brown on each side for approx. 2 mins. Then add onions and carrots and fry lightly for 2 mins. Remove from heat.

In a pot, add onions and carrots from step 2, add white wine, and contents of one packet of Q’ocina en Casa Yellow Sofrito Culinary Base,passionfruit juice, and mustard. Marinate pork sirloin in preparation with pot covered for at least 2 hrs. (refrigerated).
PREPARATION: ROASTING

In a roasting pan, arrange vegetables in a bed, placing pork sirloin on top, and add liquid from marinating process. Cover with aluminum foil and roast in preheated oven at 180°C for 45 mins or until pork sirloin is cooked through. Remove from oven.

Strain sauce and let pork sirloin rest separately. In a pot, heat sauce over low heat and add passionfruit seeds, salt, pepper, and sugar to taste. Stir until reaching a boil and remove from heat.

Cut pork on the bias (in slices), place on a tray, and bathe with passionfruit sauce

Goes well with vegetable and citrus salad.
